Good luck, caponizing went out of fashion more than 60 years ago. Even after 20 years in the poultry hobby I've only known a handful of old men who saw it done as kids, never performed it themselves. Best I can tell, there's a handful of people that still have experience performing it. And most vets won't touch a chicken, nor would they perform a surgery like that without anesthesia which would probably kill the bird before the first cut was made.
