How do you control humidity in the cooler?

Keep the room well sealed. The AC unit will pull moisture out of the air, whether it's cooling your house or cooling your walk-in cooler. You don't want any air leaks, because warm humid air will enter, and there will be too much moisture for the AC unit to deal with.

A coolbot is nothing magical. It's simply taking over the controls of an AC unit, and is measuring temperature in two places. It measures the room temperature, and it measures the temperature of the AC evaporator coils. It keeps the AC unit on long enough to pull the room temperature down to the preset level. While it's doing that, it's monitoring the temperature of the evaporator. If the evaporator drops down to freezing, it's probably because there's ice building up on the coils. When that happens, the coolbot cycles the AC unit off, but keeps the fan running. Once the coils have warmed back up to the room temperature, they're presumed to be defrosted. The coolbot turns the AC unit back on, and resumes cooling the room.
