Things that I plan to do involve a lot of environmental monitoring, hopefully with push notifications of issues.

Temperature of various refrigerators and freezers.
Temperature of some rooms/outbuildings/basements during freezing temperatures
Runtime of heating or cooling systems
Temperature of wood boiler
Remote control of assorted lights inside and outside.

Then I’ll start in on automating some of our apple sorting and packing line.

A cheap network of sensors would work great, paired with Blynk or similar.

A sorting line is PLC territory IMO. They're built for it and integrating motion control is a piece of cake, plus run time edits and easy interfacing with field devices. Programming is easy, with sorting lines theres usually some bit shifting, array work and motion control. All of these are predefined in a number of PLCs. Drop them in and go. Check out the AutomationDirect BRX and Productivity lines.
