Most of what you want to do can be done with ESP8266 and Blynk. However they will be shutting down Blynk 1.0 soon. Pushing everyone to Blynk 2.0. Costs more to get decent widgets now in the app. Can run a local Blynk server and not use their cloud service Unlimited fuel that way too. Just need a raspberry pi to run the local Blynk server on.
This is my wood stove monitor with Blynk 1.0 and an ESP8266. Uses onewire temp sensors on the inlet and outlet pipes to the heat exchanger in the furnace. BME280 for the inside temps and humidity. Outdoor boiler is not currently running yet hence the room temps.
