I don't think bell peppers will be anything like Ro-tel.
Not exactly Ro-tel, but pretty good salsa:
I take one jalapeno, slice it & grind it up with a slice of onion & a spoonful of minced garlic in the mini food processor. Add chunks of tomatoes until the processor is full. I use the little cherry tomatoes too. Maybe a squeeze of lime juice if it's available, & a little salt to taste.
Everything but the garlic comes out of our garden...
Last batch I decided one jalapeno didn't look like quite enough, so I added another small one. Wow, that one was hot! When it makes your nose run, it's about right...
