I ended up using the leftover juices from the rest period and a bit of water (maybe an inch) in the bottom of the crock pot. I failed to grab a piece going through line (I wanted to try others items) bit it looked good. The leftovers I microwaved tonight were about like normal. Only fail appeared to be trusting the probe on my smoker - it's been accurate in the past but ran about 10 degrees low yesterday so I ended up over cooking it a bit.
