Yes it can be done. Use a meat thermometer, if it was me I’d probably get it to the virg of being done day prior. Slice it all the same thickness so it reheats evenly. Worst pork loin ever is one that’s overcooked. A couple years back they backed down the fully cooked temperature for pork, I believe it’s now 135 degrees. I repeat please don’t overcook it. Good luck
