An onion, a couple of carrots and a stalk of celery and maybe a clove or two of garlic would be the base of the soup for me. Brown the beef, then add the chopped vegetable and cook for a few minutes and then put in the broth.
Thyme is one herb I would add along with a bay leaf. Add the herbs and spices you like, but be careful you can always add more but you can't take it out.
