If you back up your 6 to your iCloud account then you can sign into the 8 with the same account and load the backup onto it. This will copy over your settings and contacts almost like you didn’t even change phones.
As for the SIM card I’m not sure because it could be different with different carriers and the unlocked part may make a difference. I have swapped AT&T cards before and had them be ready to go when I turned them on.
