 central ohio | Low and slow. I have a pellet smoker and a whole packer brisket takes around 14-16 hours at around 225-250. If you are only cooking a brisket flat it is much quicker but you should put bacon on top of it to get it fat for moisture.
I just use kosher salt and coarse ground pepper as a rub after slathering it with half pickle juice half mustard. Don’t go too heavy on salt or that is all you will taste and not the beef.
I am still working on making my brisket better. Daughter was in Austin Texas and we went to Terry Black’s and I soon realized I wasn’t very good at cooking brisket.
Just have to practice more. I buy whole briskets at local Costco. Prime High quality beef is important.
