Rub them down with some of our favorite rub, marinate for 7-8 hours, typically.

This time I rubbed them down with the same rub I always use, then I made a marinade of v-8 juice, some vinegar and water.
soaked it in the marinade for about 5-6 hours. Smoked them on the traeger for about a hour and half at 175°, then cooked at 400° For a hour to seal things up, then I’ll cook at 225-250° until temp gets to 185-190°, put in a pan with some beef broth -au jus, and finish cooking for about a hour at 225°.
