In many recipes, I actually prefer the onion leaves. Probably has to do with their green color and also not bothering my eyes as much when chopping. My garden onions have been some of the hardest for me to cut up do to eye irritation.
When I purchased the onions last fall, I had a choice between white onion seedlings from Texas or Vidalia onion seedlings from Georgia. I went with the Texas seedlings, but I wish that I had gone with the Georgia Vidalias.
