Wife doesn't like anything that will rust......(stainless)....I don't feel stainless holds an edge worth a darn compared to a hardened steel.But then she has no patience to ever sharpen a knife either.
I'm beginning to think that the old black ones granddad had back in the day were still the best material to keep sharp and to put an edge on to.
