| Not an expert by any means but just did a couple hogs. First time using a breaking knife, unbelievable how good that thing was. Have a drawer half full of the traditional butchering knives, some dating back 50 years, barely used them. See the YouTube videos of the butchers and what knives they use. Since it was our first time using them Dad went all out and bought me a $14 breaking knife off Amazon and spent $18 on his fancy one, Japanese steel, outperformed all our traditional batching knives.
Always been terrible about sharpening knives even though I feel it’s an essential task one should know how to do. My brother has a mini belt sander thing and he sharpens all the knives and does a better job than I can. I can get by with a steel from there.
Something like this, seen it highly recommended on another site.
