Scrapple is similar, but different.......real head cheese is made exclusively from the head which is boiled for it’s collagen and meat, with spices, extra gelatin, and sometimes things like onions, and vinegar added for flavor.

scrapple is made up with trim from wherever on the pig, mixed with cornmeal( I think from what I can gather the old timers around here used buckwheat) usually to make a loaf, kinda like meatloaf in a way.
