I remember my dad boiling half a calf's head in a pot and picking the meat out of the cavities and eat it. I was pretty young (maybe 10-12 or so) and thought how gross that was. We normally took animals to a local butcher by that stage (whereas before I was born was common to process animals right on the farm) but I think it broke its leg or something so just butchered it and cut it up at home. He thought it was good. I wouldn't touch it. He also scrambled the brains with some eggs and ate them. That was kind of a lost art till deer hunting got popular. Now quite a few people process their own deer. John
