Dad used to buy 25 pounds or so at a time from the cheese plant, he would wrap it in freezer paper and tape it shut. It would be a bit crumbly when it was thawed out but very useable. This would have been in the era before poly bags. It was a 2 year old sharp white cheddar from Plum Hollow Cheese Factory, good eating.
How to store cheese?
