NW Washington | Any air will eventually lead to mold. Wrap it tight with plastic wrap and suck air out of the bags. A lot of foreign cheese comes with wax coating to keep it from spoiling. The texture of the cheese will degrade if you freeze it, but it will still be good to eat and will work fine for cooking, like Mac and Cheese. Freezing is probably you best option for long term storage. Check the link on freezing cheese.
