Driftless SW Wisconsin

ilikemysteak - 5/10/2012 21:14...The round steaks tend to be a little tougher and are good candidate for marinade....

I have a couple processors that will tenderize (run thru a spiked roller press) the round steaks, one processor will tenderize them twice at 90 degree angle. They call these "Swiss" steaks. They become very tender and something good for sandwiches. No need to marinade. The kids usually love thinner Swiss steaks. A good way to process some of your round. jmho.
