South Texas BBQ's will very often have cabrito. It's actually not bad!
The few times I've tried it I let it get too dry though

Low and slow is the trick and I used pecan tree wood.


Thanks Dutch. I wondered about Pecan or some fruit wood. I have mesquite that a buddy from fort worth area brings......too strong for this
