After frying russets, 2-3 minutes first time, I freeze them, whatever time it takes final fry, crispy! Salt water soak and towel fry before. I also use a towel after each time they are fried so they aren’t oily.
Prepare some like the air fryer recipe only put on a grill, flip once then can add cheese and/or bacon
