I would highly recommend brining the turkey. I’ve smoked several turkeys and brining seems to be everyones favorite.
Also I have better luck with nut woods(pecan, hickory, etc. rather than fruit woods. I smoke at 225, then the last hour I crank the smoker up to 275 to finish.
