All honey has moisture. Honey comes out of the hive at about 15 percent moisture. If not stored correctly honey can absorb moisture from the air. At 15 percent there isn't enough to promote fermentation. Once honey is crystallized it won't ferment, until you heat it up. Unless you heat it up to 125 degrees it can absorb moisture again.
