I applaud you for churning your own butter. What you are talking about is cultured buttermilk. Sweet buttermilk is what you pour off the butter after the churning is done. I never understood why it was cultured because I loved to drink it right out of the churn. When I was a kid in the 50's and early 60's my Saturday morning job was to crank the glass jar butter churn. What a boring job for a kid who is free from the bonds of school for two days only to be forced to sit there and crank that thing! All the other kids in school used store bought butter at home but my mom still used that 'old fashioned' home churned stuff. LOL Now 55 or more years later I look back at it affectionately. How many of you churned butter when you were a kid?
