NW Washington | When we had on of those things I just used the "dough" cycle and then took the dough out, punched it down and put it a bread pan, let it rise again and baked it in the oven.
No more weird shaped loaves with the the stirring gadget still in the bottom. The machine works good for making pizza dough too, but you have to plan ahead.
Tough crust can be caused by moisture around the bread when it is baking. To get a more of a crust in a regular oven you can spray water into the over or put in a small pan of hot water in the oven.
