I think uneven spacing for a start, I definitely got more even cob sizes with my JD 7000 than with my cyclo 400. Could also come from irregular seed to soil contact from how the soil was worked or not worked, inclusions like whole corn stalks and seed that is a blend, not all the same breeding. Then local watering, some got too much, some got too little while the field average was pretty good. Maybe streaks in fertilizer application. In 2007 I had three numbers in the field that was low on nitrogen (on purpose). Two numbers had uniform big ears, the third number had pop corn ears tipped back half way because it didn't like the population and being short on nitrogen (111 pounds per acre).
