I was wondering where they all go too, found an article saying the "largest" packer plant in FL closed within the last year and it was only a max of 750 cows a day.  For comparison the big ones out here can do 20K+.

Quick google search says the biggest one in the country a few years ago was actually in AR (almost 30K) only other one close was MO (14K) then down to hundreds of hd a day in SC and the FL plant.
