We just put apple chunks (after peeling and coring) into a crock pot or a dutch oven in the oven (250 degrees) and cook for 6-8 hours. The apple chunks emulsify with a little stirring at the end of cooking. Most of this year's apples were Cortland ( the tree out did it's self), but it works on the other varieties we grow in our little orchard too. For thicker sauce take the lid off and allow some water to boil off. I love apple sauce with some sugar and cinnamon (added while cooking) ! I wish good saucing to you!

Second pic; Donor Cortland apple tree gave us 5-5 gal buckets full of apples so far. Notice emergency pruning job I did this spring. Not pretty or suggested but it did allow air and light into center of this 14 year old full size tree. One person told me his dad said an apple tree needs to be pruned enough to allow a bird to fly through the middle of it. This tree would allow a goose to fly through it!
