Subject: Watermelon ripeing

I am new to growing watemelons for my use and neighbors. I planted a couple different varieties and don't remember the names. One is striped with oval or elongated melons and the other is dark green. I check the tendril to check for ripeness and this works for the striped ones but the solid dark green ones will have a dried tendril but when you cut it open it will be redish/pink and white on the inside. Am I just picking these to early? Is there something else I should be looking for? Should I just leave it on vine longer? Thanks for your replies
