Subject: thawing out ground beef

Getting setup to make a summers supply of hamburger patties. We usually just buy unthawed meat in the grocery store and use it and freeze it. Since I have just received a side of beef we're just going to use it instead. How can I thaw out 30lbs of meat safely? It's all in 2lbs packages. Thinking I might leave it in its package and put it in a large bowl in the fridge to thaw out slowly.
