Steak thickness and lots of this will depend on family size and if you need to stretch the meat. We do it a little different here depending on each critter and how its marbled etc. I always want my brisket intact for smoking lots of people dont want that . I always tell him to make as many roasts as he can into steak. Hamburger is as lean as they can get it
