City Farmer, I would look into a value added step. Making Cheese, Ice-cream, home delivery? Think outside the box. Become more efficient with what you have, make more with less.
I wouldn't overlook this post. I think home delivery, ice cream, and cheese are great options. We have a dairy local to us that makes ice cream, which I've heard is good, and then we have another a few miles south that has some of the best cheese I've ever had.
