Any pertinent reason for a discbine blade only having two "cutting blades"?

Until you brought up the term, I did not know such existed.  Found pictures of such, and that is right on.

It just "feels" to me like a spinning disk would be easier to work with and more efficient......less subject to wrapping up in all the residue that will occur........ than the lawn mower blade concept----- but, Hagie is using the "lawn mower blades" in their corn topper--------so.............
