| I'm not familiar with that model... but most of the Ford's I've seen will peg their factory gauges at 230, or at least that's the spec where they're supposed to peg out in the red. Anything up to probably close to 215-220 is still in the 'safe' zone on the guage.
I'll also add that the hottest stat I've seen for those engines (ford's generally of that vintage) is a 188 which is actually stamped at 88 C. I've not generally seen one run hotter than perhaps 95 C on a hot day and a hard pull IF the rad is clean and the smoke screw isn't wound up.
Dirty rads and wound up pumps will make a lot more heat.... and smoke.
The fan clutch as Bern mentioned would be another possibility.
