Whatever classification shows the best deliniation of variation that you want to see is what you'll want to use - narrow enough to not miss the details, but wide enough so your resulting RX won't be changing on every 1/2 pound (unless you really want it that way).

I like natural breaks, but quantile is useful to really show detail. You have to be careful when using it however, as it may show detail that is too small to manage and give you a false impression. Quantile makes the prettiest maps.
