Have a Holstein stag/bull that had a hip injury a while ago an gets around fine, wondering about butchering it. Would the meat be tainted some like a boar, or would it just be a darker color. Never butcherd one before, fed corn pellet diet with the rest of the yard. Or just send to market an take what I get. Thanks
