There are many kimchi recipes but I know that in Korea that stuff is amazingly hot with peppers and lots of garlic. It is made with Asian cabbage and sometimes daikon radishes You can smell that stuff as soon as you step off of the boat in Korea. Koreans have a separate refrigerator to keep the smelly stuff in.
