We did the hens and a couple young roosters today. Worked pretty good to skin them. Got them done and quartered and in ice water cooling. We liked skinning the old hens but will definitely use the chicken plucker and scalding vat for the meat birds. We haven't been getting meat birds the last few years but plan to start again in the spring. Raise our own food and survive.
