St.Clair Co. IL. | Wife and I LOVE strawberry rhubarb pie,
1 and a half cup rhubarb
1 and a half cup strawberries
( you can adjust the amounts anyway you want to equal 3 cups)
1 and a half cup sugar
1/3 cup flour
1/8 tsp. salt
2 large beaten eggs
1 tsp cinnamon
2 tsp. melted butter
bake at 350 for 35 mins. then crank up the heat to 425 for another 30 mins.
(the time may have to be adjusted to your stove during the second higher heat keep a eye on it about 25 mins. so it don't burn0
I also cover the top crust edge with alum. foil to keep the edge from burning.
have added a little more cinnamon and even added a little vinnilla extract but could not tell any difference.
one we like anyway.
