Back 30 years ago when we were raising Hogs and the kids are all home we used to slaughter some Runtey Hogs and a packer that bought fat hogs off of me would smoking process what we wanted and my wife would can probably 150 quarts of that stuff it never went to waste. Too bad a lot of people don't even have a pressure cooker let alone know how to use one but with these Hogs that have to be destroyed and so on people giving something for the Hogs it would be more than nothing I guess but the world has changed .remember one of those times in the 80s when Hogs got pretty cheap I decided they were going to Steal Hogs ,I'd sell them to some of my neighbors that worked in local factories and we sold several hogs for $0.20 a pound or whatever they just come and pick them up and same as I was getting downtown I figured what the hey. Archie PS that canned cured pork has a good flavor. They uaed a better tasting cure in the lockers plants in the 70s and 80s than they do today. archie
