Is there a specific reason why you don't want the seed potatoes to start sprouting?

Sprouts can interfere with mechanical planting but in the home garden, pre-sprouted potatoes tend to produce better yields than potatoes planted without sprouts.

You can plant your onion plants at different times but will probably have the best yields if you plant them all as early as possible.

The best way to store onion plants is dry and refrigerated. You don't want them to start growing until you put them in the ground.
