Here's another one. Real easy, really good. Nobody around here wants pancakes from a box:

1 1/4 cup flour
1/4 cup sugar
1 heaping teaspoon baking powder
1 level teaspoon baking soda

Stir dry ingredients together.

1 1/4 cup buttermilk
1 egg

Beat into dry mix. If you don't have buttermilk, regular milk will do just fine, but sometimes I will use one cup milk and a quarter cup of half and half (or cream) instead.

Add a 1/4 cup of cooking oil at the end, or a 1/4 cup of applesauce if you want a different flavor and low fat. Beat into mixture and go to it! Makes enough for four full-size pancake eaters.

Going to try the oatmeal ones tonight!
