Leave the south and east wall off.

Yes.

With just one door the stuff you put in first is going to have some age on it before you see it again.

Leaving a couple walls open will let you rotate your inventory.


Leaving walls off would depend upon location.

Here I want all four walls. Would prefer a large door for the north end, solid east and west walls and a complete south end door.
That way I could access from both ends, leave both ends open for ventilation when the hay is fresh and yet close for the winter.
Here storms drive rain or snow in quite a distance and the storms come from every direction (therefore all the walls).
If your storms come 85% or better from a limited range of direction(s) then less walls will work.
