Thing to do is dig up some of that wheat, bring it to the house and let it warm up. What you need to look for is new, white root growth developing as it warms up. That will tell you weather it's viable or not. Don't pay much attention to the plant "greening" up above the crown. Roots could be dead, yet the leaf tissue can look good.
