You can get close by checking block or head casting numbers. The first letter is the decade(in example, D indicates 70's, C= 60's) then the number following the decade letter indicates the year of that decade, in example, D3 = 1973. Some castings were used for more than 1 year, so an engine block casting may have an earlier year date than the actual engine build date.. IIRC, the 240 was built 65-72.

If that tag on the valve cover has the part number, that should include the build date. Decade letter and year number.
