Puts lots of miles on a LBZ....completely normal in cold temps. I would save doing thermostats until the water pump gives you troubles....then do both. Only way that thing will run close to summer temps in the winter with weather front on is if you are pulling something....at a certain point pulling too much with weather front on can raise exhaust temps.
