My family bought/sold and contracted with edible growers for 50 years. We got out of the buying and selling ourselves a few years back now, but still receive beans for a large handler of edible beans. It takes millions of dollars of handle to justify the cleaning and handling equipment. $10 per bag spread used to be the goal. The edible bean market is the wild west though and there are both good and bad people to do business with obviously, but there are some very real crooks in the edible bean business and many ways to get SCREWED. If you aren't on rail or close to it, you won't be competitive. Also, the food safety and handling requirements are getting more stringent every year now too, segregation from other crops, etc. If you're going to do it on any meaningful level prepare to pledge all of your land as collateral, get to know your buyers personally, find out where they live, find out everything about them! Get to know some very good attorney's too, you will need them at some point.
