I have the kitchen aid pasta set. I absolutely love it. We make noodles quite often now.
My recipe is: 8 eggs, 6 t salt, 12 T water, and about 7 cups of flour. If the humidity is high. You will need more flour. You want a stiff dough, but not as stiff as when you are hand rolling . I use my dough hook to mix the whole thing together.. let the dough rest for 20 minuets in the mixing bowl. Take a wad out , flatten it a bit, roll in flour Run through the roller on setting 1 fold in half roll in flour again.repeat until smooth. Turn roller to 3 and repeat rolling in flour each time until it is as thin as you like. On the pasta cutter, speed 5, roll in flour again before running through cutter. The key is to keep the dough well floured. Both sides. I use my kitchen table and cover it with flour. Turn on the ceiling fan to dry my noodles. Of course it doesn’t take long here in Arizona.
