Subject: Pit boss pellet smoker 7 series


Anyone else run one? I had a little traeger grill and never could get it to reliably work to smoke anything. It would go out to easy. Anyways I got this pit boss and pretty quickly decided it’s easy to grill with also. So far pretty happy.

Tonight I tried to do a bottom round roast, it turned out ok. I set the temp at 225 and it was running 300+. I was looking online and found to open the chimney up some at lower temps. I screwed it open to a half inch gap and then it was keeping the temp closer to where it was set. I also read that the more you use it the better it will get at holding consistent temp as it burns the finish off?

Does anyone have tips for running this particular smoker? Or basic tips for different cuts of beef or pork? Roasts/loin/brisket/prime rib/etc.? I can handle chops, steaks, and burgers fine, just not much experience outside that.
