You can make your own mix and earn some bragging rights. On the other hand you can keep it simple. For your first batch I would suggest doing a web search for Zatarain's Jambalaya Mix or Tony Chachere's seasonings. These companies have been in business for several years and make some very good products.

You might want to think about what type of meat you plan to use. Chunks of chicken and sausage are always good. You can also use chunks of turkey, deer, duck, goose or whatever with the sausage. Shrimp and crab meat would be another option.
